Benzoic acid

is obtained from the resin benzoin, that is contained in many incense mixtures. The resin descends from a tree species in Indonesia. Technically and in the industry, benzoic acid is won by oxidation. As organic acid it is also contained in various berries and fruits. The salts and esters of the benzoic acid are called benzoates, like sodium benzoate or potassium benzoate. In a solution the acid forms colourless, shiny pastilles. Benzoic acid has a strong antibacterial effect, is fungicidal and highly combustible. It delays the growth of yeast and bacteria in acidic food.
